Welcome to my blog. I have started this in order to chronicle my adventures, or misadventures, at Incanto while on my internship. This is my first post.
Today was the end of my first week at the restaurant on Church Street called Incanto. Starting out, I was very juiced to be working alongside a celebrity chef, but not the washed up or watered down celebrity that many have come to expect form tv chefs. Chris Cosentino is very well respected among those in the industry and with fans of his show. First lesson that I've learned is even if you are only open for dinner, at 6 pm, that doesn't mean that the place is empty at 6 am. I found this out the hard way as my assignment for the first three weeks involves my going in at 6 am. I work with the pastry chef, her name is Julie, and assist her in getting things ready on the pastry side of the Incanto world. This week, I made a Rose Geranium Panna Cotta and a flourless chocolate cake. Both were very tastey, though I can't take credit for either. I simply followed the recipe that was provided. Anyway, aside from having to wake up at 4:30 am to get there on time, the mornings are very peaceful.
Other notable facets of my week old experience at Incanto have been picking a lot of parsley, basil, thyme, fennel, etc., making chicken and vegetable stock, peeling lots of onions and carrots, and cutting many vegetables as well as my fingers. However slow it may be going, one has to crawl before he/she can walk. So I worry not and hold fast to the hope that in the weeks to come, this blog will be full of much more excitement.
